We can get all the nutrition that we need from our diet as long as our bodies are healthy and as long as our diets are clean with little to no processed foods. When we overeat, consume too many food additives, too much alcohol, too many drugs, not being aware of or suppressing our emotions and are too stressed, our digestive tracts can become inflamed which makes it difficult for our bodies to absorb the nutrients we need. The ingredients are clean and super variable. You can add pretty much anything to your liking. Here’s what I had in my kitchen. You really don’t need a lot of veggies for these. Just small amounts. There are two dipping sauces here because I couldn’t decide which one to go for as I felt the taste for both. I now realise that the recipe calls for both.

BANANA PANCAKE WITH BERRY COMPOTE

I want to say that not only is it simple but it is super quick and utterly easy. I added a little bicarbonate of soda to make them ultra fluffy and a little salt to balance the sweet taste. I also made a berry compote using frozen berries and served it with yoghurt and a little honey. You can add whatever you like. You might add some coconut shavings or toasted seeds. Be free and playful with whatever is in your pantry.

Summer Pineapple Juice

SUMMER PINEAPPLE, APPLE AND MINT JUICE

Pineapple is a powerhouse of valuable enzymes.  In particular bromelain, which helps break down protein, and ease coughs and loosen mucus.  Pineapple juice is a good alternative to cough syrup for a sore throat and indeed can be more effective. Bromelain is marvellous  for reducing inflammation from arthritis, injuries, laryngitis, and sinusitis, in addition to treating and preventing cardiovascular diseases, including angina and atherosclerosis. Pineapple also provides potassium, chlorine, sodium, phosphorus, magnesium, sulfur, calcium, iron and iodine along with vitamins A, B complex and C.

STRAWBERRY AND APPLE STRUDEL

This really has to be the one of the easiest, truly delicious and healthy desert recipes around. Prep time is about 5 minutes except for he phyllo pastry which needs about an hour to defrost. Plus, it is refined sugar free. Many people use sugar in their recipe, but I find that completely unnecessary. I don’t want my desert to be too sweet, I just want a hint of sweetness from the icing sugar on the top. It is quick to bake too. I’ve had a few apple strudels in my life and most of them are delicious but this one has something special because of the strawberries. The strawberries dye the whole strudel and make it a delicious pink colour. I think you’ll love this one.

VEGETARIAN LOCKDOWN LASAGNA

We all get into a funk with cooking sometimes and one of those times was during the first weeks of lockdown. Having to process the major changes to our world but not compromising on nutrition has been my first priority. So instead of getting lazy, I got busy. This vegetarian lasagna is one of my classic back in the day recipes with a slight twist. Instead of using cow’s milk in the béchamel I used oat milk which I made on the spot and instead of using wheat flour I used quinoa flour. You can use vegan cheese instead of dairy cheese and you can use coconut oil instead of butter.

I just got back from a ridiculously fun trip to Costa Rica. And it was fun for many reasons. One the one hand my partner and I have been wanting to go on holiday there for a long time and on the other hand, I’ve been wanting to check it out to run a retreat there. It’s been on the radar for a few reasons, not least for its reputation of having pristine nature. One of the things we really loved about this little beach town we found at the bottom of the Nicoya Peninsula was the food.

ALMOND NUT BUTTER

Almond nut butter is probably the easiest thing that you will ever make in your kitchen. There is nothing to it. And there is no reason why you shouldn’t be making it yourself. Store bought almond nut butter is pricy and this is a way to keep the costs down especially if you use it as much as I do. It goes into all my smoothies, on fruit bowls and on oats. I even put it on crackers as a snack. It’s super nutritious too.

This is simply one of the easiest dishes in the world to make. It is super quick to make and while the base is baking in the oven you can prepare the toppings. Once the base comes out of the oven then you can add the toppings of your choice. If you’ve been wanting to avoid wheat or gluten then this is a must try.. I got the recipe for the pizza base from Green Kitchen Stories which is truly one of my favourite places for vegetarian food inspiration.
